Chef Philip Chia is back! This is his third collaboration with The Clifford Pier to bring us a feast of Peranakan signatures re-imagined with modern twist.

As a fourth generation Peranakan, Chef Philip was only six years old when he first stepped in the kitchen to learn the finer points of pounding rempah. Since then, he has gone on to win several culinary competitions, publish cookbooks on Peranakan cuisine, and become a well-respected figure on the local culinary scene.

I missed his cooking for the last two years and is finally able to make it this time.

Our set dinner kickstarted deliciously with a Trilogy of Peranakan appetizers comprising of Grilled Spicy Laksa Prawns & Winged Beans Salad, Kurobuta Pork & Crab Meat Nyonya Ngoh Hiang, and Pong Tahu Goreng or fried beancurd balls with black fungus.

Mains were a hearty affair with some of our most well-loved Peranakan dishes.

My favourite was the Udang Masak Pedas Nanas featuring fresh, crunchy tiger prawns in a tangy Malaccan-style coconut gravy with pineapple, chili and lemongrass.

We totally adore the Satay Babi Goreng too. The pork belly is superbly well-marinated in aromatic spices, and cooked to a delightful tenderness. Had more steamed Jasmine rice to go with this dish than usual because it’s so appetizing!

Same goes for the Ikan Chuan-Chuan, a flavourful dish of snapper fillet fried with ginger, taucheo, and garlic that’s best paired with rice.

The Nyonya Chap Chai, a vegetable medley of braised cabbage with glass noodle, mushroom, dried shrimp in taucheo gravy, is another Peranakan dish not to be missed.

Lastly, we had Chendol Dome to round off the meal. The refreshing dessert is a creative take on the traditional chendol with fluffy gula melaka sponge cake, fragrant pandan-scented jelly, and red bean ice cream.
