For those of you looking at Christmas and year-end buffets to end 2020 on a celebratory note, PARKROYAL COLLECTION Pickering (previously known as “PARKROYAL on Pickering”) has returned with an all-new festive buffet at LIME Restaurant.

Other than specially-created festive treats (think Whole Baked Turkey with Red Wine Miso Sauce and Wagyu Beef Prime Ribs), there will also be international favourites and Michelin-recommended local delights featured.

While travelling may not be there possible yet, this is where you can enjoy a delectable all-around-the-world spread.

A highlight would be the inclusion of two famous hawker delights from Hong Lim Food Centre known for long lines – Tai Wah Pork Noodle and Heng Kee Curry Chicken Bee Hoon Mee, so you can save some queuing there.

Also, the dishes will be served ala carte, so you can just dine in comfort at the table.

Here’s what you can expect from LIME’s star-studded line-up for Christmas 2020:

Traditional Whole Baked Turkey served with Chestnut Stuffing
This traditional Yuletide centrepiece is a tender-roasted whole turkey with a golden-brown skin. Its chestnut stuffing adds a nutty flavour to the subtle smoky notes of the meat.

Served with roasted vegetables, chestnuts, pearl vine tomatoes, brussels sprouts, roasted potatoes, and specialty sauces.

The dish come in three unique flavours, probably seldom seen on turkeys, including traditional, Mongolian Mustard and Red Wine Miso. My favourite was the Red Wine Miso as it added a saltier, and more complex, umami flavour.

Honey and Citrus Glazed Ham
Sweet and citrusy flavours combine in a sticky glaze to coat this holiday ham, all jewelled up for the season.

Each slice is bursting with tenderness and carries that smoke-cured taste of gammon ham. Best to go with some cranberry sauce.

Roasted Idaho Potatoes with Gruyere Cheese
Oven roasted potatoes with beautiful light-coloured new potatoes inside served with plant-based minced meat and mushroom ragout.

The saucy ‘meat’ is prepared using BEYOND™ meat delivers that mouthfeel without the compromise.

Wagyu Beef Prime Ribs (available during Festive Dinner, Super Lunch Sunday, Christmas Eve, Christmas Day, New Year’s Eve)
The Wagyu Beef Sirloin has intense boost of beef flavour and sublime tenderness, served with assorted mustards and condiments.

Oven-Baked Pork Ribs (available during Christmas Eve, Christmas Day, New Year’s Eve)
Fork-tender ribs rubbed with spicy tomato paste for sweet-spicy sticky finish, served on green coral lettuce.

Seafood Platter (actual seafood items available differs depending on day and time)
The ever-popular Seafood-on-ice now comes served in a platter, which features Live Prawns, Black Mussels, Whelks, Golden Clams and freshly-shucked Irish Oysters for the usual festive dinner buffets.

Come during Christmas Day and indulge in whole Boston Lobsters to appreciate the natural delicate sweet taste and chunky flesh sans sauces.

Japanese Sashimi Sankan Platter
Freshly sliced thick sashimi slices served in a plate, with combination of melt-in-the-mouth Salmon, Tako (Octopus) and Maguro (Tuna).

Assorted Sushi
A selection of assorted sushi.

Grilled Chicken Satay served with peanut sauce
These chunks of chicken thighs are steeped in an aromatic (think turmeric, galangal and lemongrass) and mildly sweet marinade before grilling. Made with crushed roasted peanuts, the accompanying sauce is rich and aromatic.

Pickering Signature Laksa (Lobster version available during Festive Dinners, Super Lunch Sunday, Christmas Eve, Christmas Day, New Year’s Eve)
If you are looking for luxurious comfort, the Laksa comes with rice noodles, served in a spicy coconut-based gravy with sambal onions and dried laksa leaves which is pretty slurp-worthy.

Come during dinner time, brunch on Sunday or on the special days and the Laksa takes a luxe-spin with baby lobster flesh soaking up some of their lemak coconut-y rich gravy.

LIME’s Signature Assam Barramundi Fish
Loaded with aromatics, the sauce is enhanced with tomatoes, tamarind and chili pastes for that sweet and spicy taste.

Adding some rough-cut pineapples add a unique layer of sweetness as the sauce coats the chunks of fish. This now comes served in a claypot.

Singapore Chilli Crab served with Mantou (available Christmas Eve, Christmas Day, New Year’s Eve)
As one of the nation’s monumental culinary inventions, the Singapore Chili Crab takes a special spotlight in the buffet line-up (though I wished there was more juicy flesh.) The thick sauce is towards the sweeter side, best dipped with some freshly deep-fried mantou.

Hong Lim Tai Wah Pork Noodle (available for dinner on Fridays and Saturdays except on Christmas Day and for brunch on Sundays)
Fans of local flavours may want to visit during the weekends when they will be able to enjoy unlimited servings of popular hawker dishes from Hong Lim Food Centre, such as Tai Wah Pork Noodle, and Heng Kee Curry Chicken Bee Hoon Mee.

There are also long lines at both stalls, so you can have your hawker favourites in air-conditioned comfort now.

Tai Wah Pork Noodle is recipient of the Michelin Bib Gourmand (Fun-fact: Owner Mr Tang Chai Chye is younger brother to Mr Tang Chay Seng who runs Tai Hwa Pork Noodles at Crawford Lane.)

The hawkers have shared their recipes and personally walked LIME’s chefs through the preparation of the dishes.

Enjoy this either in mee kia or mee pok, with side serving of flavoursome soup added with minced meat, dumplings, and meat balls.

Hong Lim Heng Kee Curry Chicken Bee Hoon Mee (available for dinner on Fridays and Saturdays except on Christmas Day and for brunch on Sundays)
Curry noodles serves with chopped-up poached chicken and tau pok pieces. The curry base with heavily-guarded recipe prepared by the hawkers themselves, is on the rich and spicy, and slightly coconuty.

Christmas Mini Yule Logs
For dessert, there’s nothing more Christmassy than the quintessential Yule Log. This year, LIME offers you 4 kinds of log cakes to choose from.

If you like yours rich and decadent, go for the Chocolate Passion Fruit Yule Log.

The Black Forest Yule Log is a more dense-type of cake with a touch of alcohol, while the Strawberry Shortcake Yule Log is light and fluffy – so take your pick.

But if you want local flavours, the cheerful and colourful Durian Gula Melaka Rainbow Yule Log with creamy durian puree fillings is meant for you.
