We were privileged enough to attend an intimate private dinner with Meat & Livestock Australia and registered dietician Bibi Chia at Cloudstreet.
Dinner was a carefully and tastefully curated menu by award-winning Chef Rishi Naleendra that revolved around True Aussie beef and lamb, and it further reiterated the importance of eating quality red meat.
Mention red meat and the first thing that usually comes to mind is a slab of steak. However, we were quickly proven wrong throughout the course of the meal where incredibly versatile cuts of meat were transformed and utilised in multiple ways to create stellar nutrient-dense dishes for any palate and taste profile.
Fun fact: do you know that when compared to the same amount of chicken, red meat like beef and lamb has triple the amount of Iron and Zinc?
In addition to being incredibly delicious, True Aussie red meat is also one of the best sources of well-absorbed Iron, Zinc, and Vitamin B12 that helps support healthy immune system and keep your body running properly.
There is also a common misconception that lamb is gamey, and this might cause certain diners to steer away from it. However, using the ribs of sustainable Mottainai lamb from Western Australia, Chef Rishi worked his magic and created an ambrosial dish that was packed with flavour.
As the lambs feed only on carrots and olives and are reared in sustainable farms, the quality of True Aussie lamb is vastly different from that of your conventional hunk of lamb, and is so smooth, tender and easy on the palate. – each mouthful was a matrimony of intense flavours and textures; the creaminess of the fat coupled together with the smoky, tender flesh of the lamb melts away in your mouth upon first bite.
ROLE OF IRON AND THE BEST WAY TO GET YOUR IRON FIX
Across dinner, Bibi helped me understand the essential role iron plays in the functioning of our red blood cells. No matter your diet, meeting your daily recommended iron intake by eating iron-rich food like beef and lamb is super important. Without enough iron, often we might feel fatigued because our body has a harder time getting oxygen to where it needs.
This is more common in women who have a biologically higher need for iron as compared to men, and this varies throughout the different stages of their lives, including pregnancy and post-child-birth.
For instance, the Recommended Daily Allowance (RDA) for a pregnant woman is a whopping 27mg a day. The results of a 2015 poll also show that almost 50% of women in Singapore could have an iron deficiency without even knowing it.
It is pretty easy to meet our iron RDA with food, with red meat packing more of an iron punch than more easily absorbed by our body than iron-packed veggies.

Know your source: Australia is known for their happy cows and livestock, and their abundance of grassy green pastures and wide-open space provide the perfect environment for these animals to roam freely and eat healthily.
Taste the difference: The majority of cows and livestock in Australia are also grass-fed, which helps to bring out the natural richness and tenderness of their meat.
Try it out: There is so much more to beef and lamb then just the regular ribeye, tenderloin, ribs and chops. Australian red meat is incredibly versatile, and there is a cut of meat for every Asian recipe!
