‘Upgrade’ your favourite iced Matcha Latte with the sweetness of strawberries.
All it needs is the additional of fresh strawberries and strawberry puree.
There are 2 ways you can make this strawberry puree – boiling or maceration.
Making Strawberry Puree by Boiling – Instructions:
1. Chop up desired amount of strawberries, but to be safe, use around 5 to 6 strawberries. (If you end up with too much puree, you can always keep it and save it for next time.)
2. You can use a spoon to crush the strawberries, or pulse it slightly in a blender for a smoother texture.
3. Place the chopped/blended strawberries in a pot and add in a 2 to 3 tablespoons of sugar.
4. Mix, and when it starts to boil, turn down the heat and continue boiling for another minute or so.
5. Cool and use immediately or place in a glass jar and keep for future usage.
Making Strawberry Puree by Maceration – Instructions:
1. Chop up desired amount of strawberries, say 5 to 6 strawberries. Place in a bowl.
2. Drizzle a slight amount of lemon juice
3. Add 2 to 3 tablespoons of sugar, covering the chopped strawberries.
4. Mix, and cover with cling wrap and leave in the fridge for at least 30 minutes, or place in fridge overnight.
5. Next morning, you are ready to use the strawberry mixture for this recipe.
6. Note: you should not keep macerated strawberries for more than a day.
Recipe: How to make Strawberry Matcha Latte:
1. Decorate your cup beforehand with slices of strawberries.
2. Add 1-2 teaspoons of matcha powder with 2 tablespoons of hot water.
3. Whisk the matcha making sure that there are no clumps.
4. Add your strawberry puree in the cup.
5. Add in some ice cubes.
6. Pour in some fresh milk. The amount of milk would depend on your liking, about say about 100 – 150ml.
7. Pour in the whisked matcha.
You can replace the Strawberry Puree with ready-made strawberry puree, but would recommend the low-sugar / less-sweet versions or the matcha taste would be overpowered.
To get that gorgeous tri-colored presentation, it’s all about the proportion. The matcha consistency should be suitably thick. Enjoy your drink!
