Fans of Merci Marcel with outlets at Tiong Bahru, Club Street and Orchard Road (Palais Renaissance) will be thrilled to know that the company behind the brand has opened an entire new concept restaurant – French Fold at Telok Ayer, right beside My Awesome Cafe.
The 50 seaters space has a similar layout as Merci Marcel outlet at Tiong Bahru, separated into 3 spaces namely: Lounge, Café Chic, and the Garden Patio.
Stepping inside, the French Creperie is designed like a tropical paradise, painted in shades of Pine Green and decorated with potted plants and hanging vegetations.
The brand is unanimous and consistent in their branding with their repetitive floor tiles created in Italy and a lifestyle vibe in their interior design.
A French fold is a technique of folding papers into quarters and this can be seen in their signature Crepes and savoury Galettes (folding to create 4 corners).
A total of 4 different menus are available are different times of the weekdays, namely Breakfast (8am – 11am), Lunch (11am – 4pm), Afternoon (4pm – 6pm) and Dinner (6pm – 10.30pm) whereas a special Brunch menu is available from 8am – 4pm on weekends and public holidays.
In short, if you want to experience the full Galettes (a total of 11 items) and Crepes (a total of 10 items) menus, they are only available from 11am to 4pm and 6pm to 10.30pm on weekdays; from 8am to 4pm and 6pm to 10.30pm on weekends.
Traditionally, the Galette is a French-style pancake made using buckwheat flour that is gluten-free, and usually has a savoury filling.
Each Galette ($8 – $22) on their menu is named from No.1 to No. 11, with a different combination of fillings.
I had the No. 4 ($17) that comes with slices of ham, sautéed mushrooms, Comté cheese and an organic sunny side-up beautifully encased within the folds of the galette.
The combination of the taste was well balanced with savouriness from the ham and Comte cheese, balanced by the unflavoured, crispy, golden-brown buckwheat galette.
The texture of buckwheat galette is somewhat interesting, more textural bite and fibrous than the normal wheat flour version, yet tasted a little earthy and nutty.
For those interested in some Salads ($18 – $22), each of them is interestingly served in a Galette Bowl made using the same buckwheat flour and but shaped and hardened into a bowl.
For the sweets, each Crepe ($7 – $11) is made using wheat flour instead and comes with an optional scoop of Ice Cream from the Michelin-recommended Birds Of Paradise (additional $4), with flavours such as Hojicha Seasalt, Strawberry Basil and Dark Chocolate Sorbet.
I had the Crepes ($11) that comes with Raspberry Jam, Fresh Berries (Strawberry, Raspberry, Blueberry) and a scoop of Strawberry Basil ice cream.
The slice of crepe was enjoyable as it is thinly sliced, with a soft and chewy texture filled with a distinctive buttery fragrance that is pleasant without being overly sweet.
The tartness from the berries gave is a citrus punch and cuts through the sweetness whereas the Strawberry Basil added a refreshing and herbal twist to the combination.
The coffee beans used is the same as their sister outlets at Merci Marcel, a two-beans-blend of Guatemala and Columbia from Tiong Hoe Specialty Coffee, well roasted and robust with double shots of espresso for all their coffees.
For non-caffeinated options, their Hot Tea ($5) uses tea leaves from 150-years-old French Kusmi Tea House whereas their Organic Iced Tea ($9) is sourced from UMA Infusion.
French Fold has found a niche sweet spot in the market, focusing on French-style crepes and galettes, and we can look forward to more flavours unfolding in the future.
