CNY 2021: Jade Restaurant at Fullerton Hotel, Singapore

Jade at the Fullerton Hotel has always been one of my favourite Chinese restaurants. Chinese Executive Chef Leong Chee Yeng is remarkably creative, the food never disappoints, service impeccable, and the setting is just elegantly gorgeous. For a special occasion like Chinese new year, it’s definitely one of the best choices for celebratory dining. Jade’s Lunar New Year menus start from S$118++ for Family Style Set Menu (5 persons) and S$98++ per person for Individual Set Menu. See link for menu details online. I think it’s great they have menus by per person cost, so you can adjust accordingly up to 8 persons maximum per circuit breaker Phase 3 guidelines.  “牛”转乾坤大捞生 三文鱼金箔香槟冻鱼生 Gold Rush Salmon Yu Sheng with Champagne Jelly, Shallot Oil and Kumquat Dressing Charge into the new year with a spirited bull! This would be great for folks who are actively trading the stock market (like me, haha!). The golden translucent cubes of champagne jelly. Tangy kumquat dressing lends refreshing sweetness to the salmon sashimi. Here’s to a gold rush year for all.Chef also does “calligraphy” or “paintings” on the plate for the standard yusheng platters. Look at the elaborate strokes done using cinnamon powder and oil. So much effort!    For hygiene reasons, the server helped us to recite the lo-hei prosperity greetings and toss the yusheng for us. We “receive” the blessings as she recites them, so it still has the festive feel. This method totally guarantees no contamination from guests around the table. It’s the most secure way of lo-hei that I’ve seen.Chinese New Year would be incomplete for many without this auspicious salad to ring in the blessings.  肉骨茶小龙堡 Bak Kut Teh Xiao Long Bao This well-loved Jade signature is locally inspired and I have to say it’s a genius idea. Since there’s already soup in the dumpling, why not make it bak kut teh soup? Strong aromatic notes of pepper and garlic go so well with juicy, tender minced pork filling. The paper-thin dumpling skin gets its light green hue to the use of spring onions in the dumpling dough. One dumpling is not enough. I’d like a whole basket!包罗万象 浓炖一品盅 (鲍鱼,花胶,海参,绍菜,花菇,蒜子,猪蹄,狮子头,芋头) Braised Abalone, Fish Maw, Sea Cucumber, Chinese Cabbage, Flower Mushrooms, Roasted Garlic, Stewed Pork Trotter, Deep-fried Pork Ball and Yam The pen cai experience is delivered in generous individual serving portions. This was really luxurious and collagen-rich; you can taste the tender braised ingredients in a rich and flavourful base. Your skin and joints will thank you for it. 好彩头元宝 和牛白萝卜饺子拼猪肉香菇白菜饺子 Poached Wagyu Beef and White Radish Dumpling Combination with Poached Mushroom and Chinese cabbage Pork Dumpling The Wagyu beef dumplings with dried Mandarin orange peel reminds me of the beef ball dim sum but in dumpling form, while the pork and mushroom dumplings are a familiar Chinese dumpling staple. The presentation is just so pretty. 祥龙贺岁 姜葱腊鸭爆波士顿龙虾 Wok-fried Boston Lobster with Preserved Duck and Ginger Spring Onion This (see first photo as well) was probably the most stunning dish from all the highlights. Fresh sweetness of Boston lobster meets salty preserved duck, in a super umami interplay of flavours enhanced by notes of ginger spring onion.  富贵逼人 X.O. 酱蚝豉韭菜炒萝卜糕 Wok-fried Radish Cake with Dried Oyster and Green Chives in X.O. Chilli Sauce   Who does not love carrot cake? This well-loved local dish gets an upgrade with Jade’s special X.O. Chilli Sauce and the bold flavour of dried oysters in place of chye poh or preserved turnip. Amazingly tender cubes of radish cake get a nice char and a generous coating of savoury egg. Yum. 甜蜜团圆天山雪莲子酒酿汤圆拼玫瑰情人饼,香煎小麦草马蹄糕Sweet Rice Wine Soup with Rice Dumpling and Snow Lotus Accompanied with Baked Rose Sweetheart Cake, Pan Fried Wheatgrass Water Chestnut Cake This little trio of desserts present contrasting yet complementary textures and flavours. Start with the nourishing warmth of the sweet rice wine soup with chewy rice dumpling (tang yuan) and jelly-like snow lotus, followed by the crispy-on-the outside, chewy-on-the-inside wheatgrass water chestnut cake. Finish off with the delicately floral scented sweetheart cake. It’s a take on the classic “wife cake” with the sweet winter melon filling encased within a crunchy pink outer pastry shell.
